Chorizo, Chicken, Chickpea & Couscous: The Almost One Pot Wonder

I've written before about processed meat and cancer risk. But it still doesn't put me off eating processed meat completely.

I think if we are sensible about it, then it can be enjoyed as part of a varied diet.

In this recipe the chorizo is combined with chicken, chickpeas and spinach so you get the great chorizo flavour, but the benefits of all the other potentially more nutritious ingredients as well.

As an 'almost' one pan wonder it is easy to make, has minimal dishes and best of all is absolutely freaking delicious.

 

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, sliced into chunky wedges
  • 1 good quality tasty chorizo sausage, sliced (depends a bit on size)
  • 200-300g chicken breast, sliced thinly
  • 1 x 400g can chickpeas, drained and rinsed
  • 100g Israeli/pearl couscous
  • 1 Cup (250 mL) boiling water
  • 200 g frozen spinach

Method

  1.   In a large fry pan or heavy based saucepan (note you will need to be able to cover it with a lid later on) heat oil
  2.   Saute onion
  3.   Add chorizo, cook until starting to brown/caramelise
  4.   Add chicken, cook until browned and cooked through
  5.   Remove everything from the pan and set aside for later (leaving the now deliciously flavoured oil)
  6.   Add the couscous, cook until light brown
  7.   Add the boiling water, stir, cover pan and reduce heat.
  8.   You will simmer the couscous until tender and all water has been absorbed, this takes around 15-20mins. Check it and stir it a couple of times during the cooking process
  9.   Return the onion, chicken and chorizo to the pan
  10.   Add the chickpeas and frozen spinach
  11.   Cook until everything is piping hot and the spinach is cooked
